EXECUTIVE CHEF KARSTEN HART

Originally from Baton Rouge, Chef Karsten Harts mother came from Germany and his father is of direct Sicilian heritage.  While the influence of the South is apparent in his personal cuisine the effect of two years spent in Germany and Sicily are exemplified by his culinary diversity.  Perhaps the most significant impression of his time overseas was the many wholesome meals, the great flavors of regional dishes he enjoyed at large gatherings with European family and friends.  Those times provoked and inspired Chef Karstens passion for cooking.  He saw it as an opportunity to bring happiness and to create a sense of community. 

 

Chef Karsten returned to the US to attend Louisiana State University.  As many college students do, Chef Karsten worked in various restaurants to support his schooling.  In between studies of psychology and anthropology he always looked for opportunities to nourish his love for cooking.  Chef Karstens next move was to the culinary Mecca of San Francisco where he attended and graduated from California Culinary Academy. 

 

After completing the CCA Chef Karsten returned to Louisiana to work at the Windsor Court Hotel kitchen under French Master Chef Rene Bajeaux.  After Chef Bajeauxs departure he spent two years cooking with Exec. Chef James Overbaugh, previously of Ernas Elderberry House. 

It was Chef James who introduced Chef Karsten to the Elderberry House Restaurant.  During Chef Karstens tenure as the Windsor Court Sous Chef he and Chef James worked together extensively and also became close friends.  In 2003 Chef James returned to The Estate by the Elderberries.  Shortly thereafter Chef Karsten joined the Elderberry culinary team and the two chefs once again found themselves cooking side by side.  Chef Karstens talent and passion moved him quickly ahead at the Elderberry House.  During 2004 he went from Sous Chef to Chef de Cuisine and after Chef James became Director of Operations in 2006, Chef Karsten took over the responsibilities of The Estates Executive Chef.  Since then  Chef Karsten is at the helm much to the delight of guests and owners.

 

Executive Chef Karsten is deeply committed to collaborating with the many local artisan farmers for all his kitchens produce and meat products .  As the person who is now guiding the Estates culinary direction, he proudly carries forth Ernas long tradition of gastronomic excellence.

 

Chef Karsten has been featured on the local network television affiliates and on The Travel Channel.  His recipes are regularly shared with cooking aficionados during his classes here at the Estate.
