With enrollment limited to 12 students per session, Chef Karsten Hart offers
exciting classes filled with recipes and techniques carefully crafted throughout
his 15 years in the kitchen. There are no pre-requisites necessary- all that is
needed is an open mind, lots of enthusiasm and comfortable shoes.
The cooking school, now in its twenty-fifth year, takes place in a lovely setting
- 9 acres of lush Sierra Foothill terrain enfolding a European Estate comprised
of the restaurant and Erna's 10-room castle-hotel, Chateau du Sureau. The
Estate's authenticity makes one feel as if they'd stepped right into the French
countryside. This sense extends to the kitchen as well... the expertise and
creativity of Chef Karsten's staff ensures that you will receive a
culinary experience rivaling those found in the celebrated restaurants of Europe
- without jet-lag!
A typical class proceeds as follows: Students arrive at 8:30AM for the
first of three 8-hour classes. Students are provided with crisply
starched chef's "whites" and a steaming cup of coffee, then everyone meets for a
half-hour of "theory" regarding the day's menu. Students then move into the
kitchen for their hands-on education, where they may work at their own pace,
focusing on their own particular interests - from entrees to soups to salads and
desserts. Each day ends with a sit-down six-course dinner, allowing students to
fully enjoy the fruits of their labor! Spouses or friends may join for the cost
of the evening's fare.
To enhance your culinary adventure, an informative wine seminar is included in the program - "Learning the Secrets
of Wine" and "Pairing Food and Wine".
This marvelous three day experience concludes with a beautiful awards dinner, where
each "graduate" is presented with a well earned diploma. Special student rates
for accommodations at Chateau du Sureau are available.
Classes are $1,250.00 for the three day session. This includes tuition, all recipes,
three luncheons and three six-course dinners each night (gratuities for the
dining room service and alcoholic beverages are additional).
